Elizabeth was the daughter of Jeremiah Wilkinson of Ballycarnan. She was also known as Susan. It seems likely that she looked after the farm after her husband died.
She was enumerated in the 1901 census as the head of household at Cappanageeragh, Geashill, King's Co., and described as Elizabeth Strong, widow, a Farmer, aged 52. Enumerated in the same household were her sons William, John and James. She was recorded in the 1911 census as the head of household at Cappancur, King’s County, Ireland, and was described as Elizabeth Strong, Irish Church, can read & write, aged 56, farmer, widow, married for 14 years, 8 children all still living, born Queen’s County. Enumerated in the same household were her sons James and Joseph, daughter-in-law May and granddaughter Elizabeth May.^4,5,6,7

Elizabeth Strong appeared on the census of 8 April 1901 in which she was described as Elizabeth Strong, head of family, Church of Ireland, able to read & write, aged 25, a farmer, not married, born in Queen's Co. She was enumerated with her sister Caroline (aged 21) and brother Joseph (aged 18). The house was described as2nd class, having walls of stone, brick or concrete, a roof of thatch or wood, with 5 or 6 rooms, and 2 windows in front. 5 rooms were occupied. It had 9 outbuildings. The landholder was Eliza Strong. An Elizabeth Strong was also landholder for a property enumerated on the same page, occupied by Thomas Egan.

The Valuation Office records show that Elizabeth Strong was the occupier of the Shanbeg farm from 1901 until 1907, when the lease passed to an Edward Goodwin.^4,5
